Ingredients

2 tablespoon cilantro leaves (or as much as you like)
2 tablespoon mint leaves (or as much as you like)
2 cloves of garlic, chopped
2 tablespoon Greek style plain yogurt
1 tablespoon cumin
1 tablespoon paprika
1 tablespoon (recommended: McCormick Montreal Seasoning)
1 pound ground chicken or ground lamb
2 tablespoons extra-virgin olive oil, 2 turns of the pan
2 whole wheat pita pockets
1 medium tomato
2 cups of lettuce
1 cucumber
1/2 a lemon
Tips
We also added hummus as an additional spread and cooked up a side of Tasty Bite's Curried Peas (Whole Foods).
This yeilded extra veggies which I used with my left over chicken patty for lunch the next day.
Directions
Finely chop herbs, and garlic . In a bowl combine the herbs, yogurt, garlic, and seasoning. Add the meat and mix to combine...
Form into 4, very thin patties (1/2" thick).
Wash up and preheat a large nonstick skillet with a couple tablespoons extra-virgin olive oil over medium-high heat. Cook patties 3 to 4 minutes on each side.
Chop and mix greens and vegetables together. Dress with juice from 1/2 a lemon.
Cut tops off the bread and fill pita pockets with patties and veggies.
Serving Size: 2 patties, 1 pita
