Ingredients

    2 turkey drumsticks, skin removed
    1 medium onion, chopped
    1 clove garlic, minced
    1 large can of diced tomatoes (28 oz)
    2 cups broth, either chicken or vegetable
    1 cup mushrooms, quartered (optional)
    1 cup frozen green beans (optional)
    1 tbs oregano

    salt & pepper to taste

Tips

You can also make this in a regular pot on the stove. It takes approx 1.5 to stew. Recipe values are given for mushrooms and green beans, but you can add any veggies you like---zuchini and spinach also work well, as do green peas.


Directions

Skin turkey legs. Chop onion and garlic. Place all in slow cooker along with 1 large can diced tomatoes, 2 cups broth, 1 bay leaf, 1bs oregano and grind in some black pepper. Cook on high or on low until meat is falling off turkey bone. Then remove turkey leg from pot, take meat off, dice it and return meat to slow cooker. Add quartered mushrooms and frozen green beans and cook for another hour in crock pot, 20 minutes over the stove. Add salt and more pepper if needed, then serve as soup or as stew over rice.
