Ingredients

1 (10 oz) pkg frozen chopped spinach
1 Tbsp minced garlic
1 tsp crushed red pepper flakes (optional)
6 yukon potatoes, peeled and chopped
1/2 cup country crock + calcium
1/2 cup fat free sour cream
1/2 cup fat free plain greek yogurt
1 Tbsp chopped onion
1 tsp salt
1/2 tsp black pepper
1/4 tsp dried dill weed
1/2 cup sargento reduced fat cheddar cheese
Directions
Preheat oven to 350 degrees F. Lightly grease a medium casserole dish.
Saute spinach in a pan with minced garlic and red pepper flakes if desired. Place potatoes in a pot with enough water to cover, and bring to a boil. Cook 15 minutes, or until tender but firm. Drain, cool slightly, and mash.
In a bowl, mix the spinach, mashed potatoes, margarine, sour cream, yogurt, onion, salt, pepper and dill. Transfer to the prepared casserole dish. Top with cheddar cheese.
Bake 20 minutes in the preheated oven, until bubbly and lightly brown.
