Ingredients

    1 large Chicken breast half, cooked and cooled
    1/2 cup mayonnaise
    3 Tbsp sweet relish
    1/2 tsp celery seed
    2 tsp lemon juice concentrate
    Salt
    Pepper

    *** The chicken breast I used equaled 2 1/4 cups cooked and shredded.

Directions

Makes 7, 1/4 cup servings

Shred cooked chicken breast, I do this with my fingers. Add remaining ingredients. Can be eaten right away or refrigerated for later use. Serve on crackers or bread.

This would also be good including celery or onion, but my husband is opposed to both.
