Ingredients

    (2 t oil, 1 onion, sliced)
    1 green pepper, sliced
    ˝ lb sliced roast beef
    (1 - 2 T horseradish)
    4 whole wheat tortillas
    ˝ c shredded low-moisture mozzarella cheese
    10.5 oz can Au Jus
    2 sweet potatoes, thinly sliced
    (Oil, paprika)

Directions

Sauté onions 5 minutes, add peppers and sauté
until soft, about 5 minutes more. Remove onions and
peppers from pan and place a tortilla in the pan. Top
w/ half of cheese, beef, onions, peppers and
horseradish. Top w/ another tortilla and cook until
browned on both sides and cheese is melted. Repeat
w/ remaining tortillas.
Heat Au Jus as directed. Toss sweet potatoes w/
oil and paprika. Roast at 400 F for 35 minutes or until
crispy.
