Ingredients
-
1 package (about 1-1/4 pounds) chicken breast halves
3/4 cup 3-cheese tomato sauce
1/2 cup shredded cheddar cheese
2 ounces shredded part skim mozzarella cheese
1/3 cup whole-wheat Italian seasoned bread crumbs
Tips
1-1/4 pounds of chicken breast usually comes in a package of three breasts.
Serve with whole-grained pasta and an appropriate vegetable mix.
Directions
Rinse the chicken breasts and pat dry.
Separate the tenders part of the breast and lay on a cookie sheet covered in aluminum foil. Srinkle some of the cheddar cheese into the space between the tender and breast, fold the tender back over, then turn the breast over. Cover each breast with about 1/4 cup sauce, then sprinkle the rest of the cheddar and mozzarella cheese over the top. Top each breast with some bread crumbs (not too many, it's for flavor).
Cook in a 350 degree oven for 20 - 25 minutes until chicken juices run clear when poked, or internal temperature reaches 165 degrees.
