Ingredients

    2 Corn tortillas. 6"
    2.5 oz. Chicken (already cooked!)
    1 oz. Refried pinto beans
    1 slice (ultra-thin) Colby-jack cheese
    1 oz. Onion, raw
    1 T. Green chilies, diced
    2 T. Peach-mango salsa

Tips

* Recommend using reduced-fat cheese to get more cheesy goodness for just a few more calories.
* If you like spicy, add some diced hot pepper
* Fix a bunch for a party: make 'em assembly-line style and use pizza pans or cookie sheets to cook several at once


Directions

(Important: chicken must already be cooked!) Spread beans on corn tortilla; add remaining ingredients (except salsa) and cover with second tortilla. Bake on an oven-safe pan for about 10 minutes at 350 until tortillas are hot through and cheese is melted. Top with cool salsa and serve.
