Ingredients

    12 eggs, scrambled
    1 cup fresh spinach, chopped
    1 cup fresh mushrooms, diced
    1 cup shredded cheese

Directions

spray pan with cooking spray
scramble eggs
mix in all other ingredients
bake at 350 for 45 minutes- or until top is golden

Serving Size: makes 8 servings in 15X10X2 baking pan
