Ingredients

2 Tbsp Smart Balance Buttery spread
1.5 pounds of Kale, ribs removed, coarsely chopped.
2/3 c. water
2 medium apples, peeled and sliced
1 onion peeled and sliced
2 Tbsp Cider Vinegar
4 tsp yellow Mustard
1Tbsp honey
Tips
May use equal amount of olive oil. If you are new to "ribbing" kale (I was) think of pulling leaves off the stem. I add my own variations, such as onions and honey. Some use brown sugar. I don't have all the water evaporate, it makes for better storage.
Directions
Heat spread in Dutch oven over medium heat until liquid. Add apples and onions and saute 5 mins. Add Kale and gently toss until it is bright green, about a minute. Add water, cover and cook; stirring occasionally 3 mins. Stir in apples (unless you've kept them in there) cover and continue cooking 10 mins, until Kale is tender.
Meanwhile, whisk vinegar, mustard and honey in small bowl. Add mixture. Increase heat to medium high. Heat uncovered 3 to 4 mins, until water evaporates.
