Introduction

A delicious alternative to the traditional pinto bean chili, that has a lighter bean taste, allowing for more of the spices and the taste of the chicken to come through. Ingredients

    Kuntz Great Northern Canned Beans (10 oz can), 3 serving
    Organic Chicken Broth (1 Cup), 5 serving
    Chicken Breast, no skin, 20 ounces
    Garlic, 4 tsp
    Onions, raw, 1 small
    generic low sodium tomato sauce (8 oz can), 1 serving
    Tomato Paste, 0.5 cup
    Pepper, black, 2 tbsp
    *Pepper, white, 2 tbsp
    Pepper, red or cayenne, 2 tbsp
    Cilantro, dried, .125 tbsp
    Sage, ground, 2 tbsp
    *Cumin seed, 2 tbsp
    Paprika, 1 tbsp
    Salt, 1 tsp

Tips

During the last half hour is the perfect time to cook some cornbread to go on the side. Yummy!


Directions

In a large pot, boil chicken breast with a little salt and pepper until done (about 10 mins, once boiling)

Place spices in the bottom of the slow cooker, ( I use minced garlic so I put it in now too), and onion (small onion or a large pearl onion).

Drain and rinse the beans and add them to the slow cooker.

Add 5 cups of Chicken Stock ( I prefer organic low-sodium)

Add tomato sauce and tomato paste

Stir contents of slow cooker just enough to break up tomato paste.

Turn on slow cooker to low.

When chicken is done, cube it, and add to slow cooker. Cook chili for 4 ½ hrs.

The last ½ hour turn the slow cooker to high.

Serve.
