Ingredients

    1 tsp olive oil
    Onions, raw, 1 medium finely diced
    3 cloves of garlic peeled
    1.5 tsps ground cumin
    1.5 tsps ground coriander
    2 large red chillis
    Ground beef, extra lean, 500 grams
    1 large red Capsicum finely diced
    Yellow Sweet Corn, Frozen, 1 cup kernels
    Cilantro, 1/2 bunch finely chopped
    2 x 400g chopped tomatoes in puree
    1 x can of kidney beans

Directions

heat oil and cook onion until soft - add ground beef and brown.

While browning add half a can of tomatoes into a magic bullet or mini wizz - then add dried spices, chillis and garlic and puree.

Add chilli tomato mix to the beef and stir well.

Add the Capsicum, Corn, kidney beans and the rest of the tomatoes.

Simmer for 15 minutes until thick and fragrant

Add the cilantro at the end - stir and serve.

Serve topped with greek yoghurt and more cilantro.

Serving Size: makes 7 heaped cup servings
