this is my mother's chicken salad recipe. it is great.
To make it lower fat use lowfat mayonaise

Ingredients

    6 oz chicken breast,chopped
    1/2 cup celery chopped
    1/2 cup onion, chopped
    3 Tbs mayonaise
    salt and pepper to taste

Tips

i usually make a larger making. I make 2-3 times this recipe. Sometimes I add raisins and apple. Sometimes carrots. creative. If you use fat free mayonaise it will even be more heart healthy.


Directions

cook chicken untill tender, let cool then chop, chop celery, and onions. mix together all ingredients well. add salt and pepper to taste.
Serve on bed of lettuce or eat with crackers.

Serving Size: 2-3 servings makes 12 oz.s
