Introduction

I'm always looking for a new way to make kale. This recipe is an adaptation of one I saw on a bag of prepared kale. I'm always looking for a new way to make kale. This recipe is an adaptation of one I saw on a bag of prepared kale.
Number of Servings: 6

Ingredients

    2 T olive oil
    1/2 cup chopped onion
    3 cloves garlic, minced
    3 T Dijon mustard
    2 T apple cider vinegar
    1 T sugar
    2 cups organic vegetable broth
    16 oz bag prepared kale (~12 cups kale)
    1/3 cup craisins


Directions

In a large stockpot, heat the 2 T olive oil over medium heat. Add the onion and garlic and saute about 5 minutes or until tender. Stir in the mustard, vinegar, sugar and vegetable broth and bring to a boil. Add kale and lower heat to medium. Cover the pan and cook for about 5 minutes. Add the craisins and cook for 5 more minutes until most of the liquid is absorbed.

Serving Size: Makes 6 1-cup servings.

    Very Good
    I'm not a fan of kale, but enjoyed a sweet & sour kale dish that I had a restaurant and was looking for something similar; this is close enough to fit the bill. I love the sweet tang that the Craisins add, but might use a little less Dijon next time. I'll definitely be making this recipe again! - 7/15/13
