Introduction

Ingredients

1 medium onion
1.5 cups brown rice
2 chicken bouillion cubes
1.4 lb chicken breast (boneless and skinless)
1 can cream of mushroom soup
4 tbsp olive oil
Tips
If you make this with white rice instead of brown rice it cuts down the cooking time to 1 hour.
Directions
1. Chop the onion.
2. Heat a large skillet and add 2 tbsp of olive oil. add onion and saute until translucent. Then pour in the rice. Brown rice over medium heat for 5-10 min.
3. Mix 2 chicken bouillion cubes with 3 cups of water. (I usually heat this in the microwave)
4.Pour the browned rice and onions into a casserole dish. Add the water bouillion mixture.
5.Add 2 tbsp of olive oil to skillet and heat to med-high heat. Brown chicken breasts in the hot skillet (3-5 minutes each side).
6. Place brown chicken breast into casserole dish (on top of rice mixture). Cover and bake in oven at 325 to 1 hour and 25 min.
Serving Size: makes 5 servings
