I changed the recipe to make 5 servings because I like to make a batch on the weekends for each morning before work.
Number of Servings: 6
Ingredients
-
2 and 1/2 cup oats
1 tsp vanilla extract
2 and 1/2 tsp cinnamon
sweetener, such as 1/4 c maple syrup
2 and 1/4 cup unsweetened applesauce (You can sub pumpkin or mashed banana)
1 and 1/4 cup milk, creamer, juice, or water
1/4th tsp salt
3 T peanut butter
Optional: handful of raisins, chopped walnuts, brown sugar for the top
Directions
Preheat oven to 375 degrees.
Prepare baking dish with nonstick spray.
Combine raw oats, spices, applesauce, and liquid.
Pour into a small baking pan, loaf pan, or 1-cup ramekins (or, for mini boats, 1/2-cup ramekins).
Cook for 10-15 minutes, or more until it’s firm.
Finally, set your oven to “high broil” for 3 more minutes (or simply just bake longer, but broiling gives it a nice crust).
Serving Size: Makes 5 servings
