Introduction

Was looking for a low sodium, low sugar bbq sauce and came across a recipeusing vegetable juice. Skeptical but I tweaked it a bit and came up with this. Ingredients

    1 medium onion, chopped fine
    3 large cloves garlic,chopped fine
    2 tbsp packed brown sugar
    2 tbsp. splenda
    1 1/2 tsp. frenchs salt alternative
    2 tsp mustard powder
    1/2 tsp. chili powder
    2 1/2 tbsp ground cumin
    1/4 cup worcestershire sauce
    1/4 cup red wine vinegar
    2 cup regular v8 juice
    1/2 cup homemade ketchup, "heinz"
    3/4 cup water
    1/4 cup cornstarch plus 1/4 cup water

Tips

This makes a great tasting bbq sauce. It reminds me of kraft. I watch the volume closely because the more you reduce this without adding the corstarch, the higher the nutrtional counts will be.


Directions

In a food processor add garlic and onions and chop fine.

In a med saucepan add garlic and onion mixture, then add remaining ingredients except cornstarch and remaining 1/4 cup of water.

Cook tomato mixture until reduced to four cups. Dissolve the cornstarch in the remaining 1/4 cup water. Pour into sauce and stir until well combined. Will thicken instantly.
If mixture is too thick, thin with a little water.



Serving Size: Makes 16- 1/4 cup servings.
