Ingredients

    Onion- one medium onion sliced into rings
    Garlic- one head garlic cleaned and coursely chopped
    28 Kalamata olives- pitted Mezzetta or brand of choice
    Olive oil- 2 tbs
    Diced tomatoes- one 15 oz can with juice
    Chicken- one breast, leg, and thigh skinned and boned
    thyme- 1 tsp dried
    parsley- 1 tsp dried
    Chilli pepper- 1 dried Chilli with seeds

Tips

This recipe can be doubled by doubling all ingredients. Set aside back and innards of whole chicken for stock or other recipe.


Directions

Prepare all ingredients. Remove skin and bones from chicken and cut into approximately one ounce medallions or chunks. Heat olive oil over medium heat and add garlic and onion, sautee 3-5 minutes. Add chicken and turn to sear all sides. Add tomatoes with juice, olives,thyme, parsley. Break open or cut chilli with scissors into small pieces and allow seeds to fall into skillet. Stir. Simmer for 20 minutes. Serve over rice, quinoa, pasta or eat as is.
