Introduction

Ingredients

    3 cans garbanzo beans drained
    1 can cooked tomatoes with liquid
    2 cups cooked rice
    2 cups chopped sauteed sweet bell peppers
    2 cups chopped sauteed onions
    2 cups cooked brocolli
    2 cups frozen peas
    2 cups cooked sweet potatoes, cubed
    1/4 cup minced cilantro
    1 tsp salt
    2 tsp garlic powder
    3 tbsp curry spice

Tips

Substitute whatever veggies you have on hand, just make sure you cook them first to save time. I simmered mine for about 2 hours because I like my garbanzos soft.


Directions

Saute onions and bell pepper until slightly browned in a tbsp of oil. Add the rest of the ingredients and simmer for at least an hour. Crockpot would be great. Tastes much better the next day. Can be easily frozen.
