Delicious Coconut cookies with a hint of cinnamon. These are made with applesauce so they do have a softer texture, a mix between a cookie and muffin top texture. Delicious....Must try! Ingredients


    -4oz single serve container ofOriginal Apple sauce
    -1/2 cup of brown sugar
    -1/2 cup of white sugar
    -1 egg
    -1 1/4 cup of flour
    -1/2 TSP of baking soda
    -1/4 TSP of salt
    -1/2 TSP Vanilla
    -1/4 TSP of ground cinnamon
    -1 cup of sweetned coconut flakes
    -1/4 cup of sweetened coconut flakes for garnish

With this recipe it will be 86.2 calories for each cookie if you make 26 cookies. The fat and rest of the info on nutritional info is not correct.
Im sure they will also taste delicious with splenda substitued, and/or the splenda brown sugar substituted. Just remeber to use the sugar/splenda conversion charts at http://www.splenda.com/cooking-baking/conversion-charts

Also it will taste delicious if you melt 4 tbsp of mini semi sweet chocolate chips and drizzle on top of the cookies after they have cooled off. This will add 10.7 calories to each cookie if you make 26 :)


Directions

-Preheat oven to 350 degrees
-Mix Applesauce, brown sugar, sugar, and egg in a large bowl until fully mixed
-In a seperate medium sized bowl mix together flour, baking soda, and salt
-Gradually add the flour mixture to the large bowl with other ingredient, mix together well
-Add Vanilla Extract and Cinnamon and mix
-Spray Baking sheet with Nonstick spray
-Drop rounded teaspoons onto Tray 2-3 inches apart, This should make about 26 cookies
-With remaining 1/4 cup of coconut sprinkle coconut on top of each cookie dough drop before putting in oven
-Bake 10-13 minutes- You want the cookies to look a dark golden brown, make sure bottoms do not burn but you want them well cooked so the outside will be a little crispy since inside is a softer texture
