    18 English Muffins toasted and cubed
    4 cups Shredded Cheddar Cheese
    16 cups Egg Beaters
    20 cups Skim Milk
    6 tsp Yellow Mustard
    1 cup Sauteed Diced Onion
    20 Veggie Sausage diced


Place cubed toasted Engilsh Muffins in greased long deep hotel pans. (Divide evenly between two pans. Crumble diced veggie sausage over muffins. Mix remaining ingredients in large bowl. Pour over muffins and sausage. Bake at 350 degrees 35 to 40 minutes or until eggs are set. Internal temperature must reach a minimum of 165 degrees.
