Introduction

Ingredients

    1 cup dry Adzuki beans
    1 cup dry White beans
    1 cup Navy beans
    1 smoked Turkey drumstick (leg)
    approximately 1 liter water
    Canola oil spray
    1 large yellow onion chopped
    5 celery stalks rinsed and chopped
    3 carrots rinced and slice
    1 bay leaf broken in half
    1 tbl Old bay Seasoning
    2 Tbl Gumbo File
    1 Tbl Paprika
    Cayenne Pepper to taste
    Salt and Fresh ground Pepper to taste
    1 cup Okra (optional)
    mustard to taste (optional)
    2 sprigs fresh thyme crumbled (optional)

Tips

This meal is best served with bread, tortillas or buscuits to make a complete protien with the beans.


Directions

Choose three types of beans with different colors.
Rinse and pick out stones or debris from beans.
Place beans in large pot and fill pot with water.
Soak Beans over night.

On following day. Bring beans to boil and let simmer while preparing other ingredients.
Chop and saute onions and celery.

Place Smoked Turkey drumstick in Large crockpot.
Drain beans and Add to crockpot/slow cooker.
Add onions, celery, and carrots.
Cover with water and add Bay Leaf, Old Bay Seasoning, Paparika, Gumbo File, and Fresh Thyme.
Add Vinager.
Slow cook for 8 hours.

One our before serving taste.
Add salt, black pepper, and cayenne to taste.
Add frozen okra (optional).
Cook one hour more and serve.

Serving Size: Makes one large crock pot of food; apporximately 16 one cup servings
