    4 Large Portabello Mushrooms
    1 tbs. Olive Oil
    1 tbs. Salted Butter
    4 oz. Part Skim Mozzarella Cheese
    4 Inner Leaves of Romaine Lettuce
    1/4 Cup Prepared Pesto
    1/4 Cup Regular Mayonnaise
    4 Hamburger Buns


To make this dish healthier you could use whole grain/whole wheat hamburger buns and also use a low-fat mayonnaise.


Place butter and olive oil in a non-stick skillet, once butter is melted add mushrooms with stems out and gill side down first. Cook for 4-5 minutes. While the mushrooms are cooking prepare the pesto mayo sauce in a bowl by mixing pesto and mayo together, set aside. Flip over mushrooms to cook for another 4-5 minutes add cheese into center of mushroom cook until tender but still firm.

Take mushrooms off heat and prepare toasted buns with pesto mayo on each side of bun, place a leaf of romaine on bottom and mushroom on top.
