Introduction
This is the sauce recipe from a finalist of SparkRecipes Un-Chained Recipe Contest Finalist, KRAMTHEGRAM.My family does not follow the diet I am doing through SparkPeople, so I have had to adapt a lot recipes for single servings. Although the recipe is enough for two whole pizzas, I cook the sauce and use it to make my own individual pizzas on family pizza night. 1/4 cup of it will cover English Muffin Pizzas or my favorite Sandwhich Spit pizzas. Ingredients

4 Roma or Plum Tomatoes, peeled, seeded, & cored
1/2 tsp. Italian Seasoning
1/2 tsp. Basil(fresh or dried)
1/2 tsp. Fennel seed
1/2 tsp. Salt
1/4 tsp Red Pepper
1/2 tsp. Olive Oil
1/4 tsp. Minced Garlic(I use a touch more.)
1 tsp. Brown Sugar, unpacked
Tips
1/4 cup of this sauce is enough to cover 4 Englih Muffin or Sandwhich Spit individual pizza. 1/2 cup can be used on on whole pizza.
Directions
Place prepared Tomatoes in a blener with all spices, salt, sugar, & oil. Blend until smooth. Pour into a pot and cook on medium high for 30 minutes until reduced by 1/2. Remaining sauce can be frozen for later use.
Serving Size: Makes enough sauce for two whole pizzas.
