    2 burrito size tortillas
    1 cup poached chicken, sliced
    1 cup Colby jack cheese, shredded
    4 tbsp Chi Chi's Black Bean and Corn Salsa (may be replaced with any type of salsa)


Optional: You can add salad dressing (we like to use Ranch) for added flavor.

Optional: You can grill the chicken instead of poaching it.

Optional: Serve with sour cream, taco sauce, nacho cheese, or additional salsa or dressing to dip quesadillas in.


1) Place one tortilla on quesadilla maker
2) Cover with chicken, cheese, and salsa
3) Place one tortilla on top and cook until golden brown and cheese is melted
4) Cut into slices and let cook before eating
