Ingredients

    250g cooked chicken breast, cubed
    100g grapes, halves
    1/4 c. light mayo
    1 tbsp curry powder


    Cube 250g of cooked chicken breast into bite size pieces. Add 1/4 c. mayo to the chicken, turning to coat. Mix in 1 tbsp curry powder. Gently fold in grapes. Spread 100g onto your favorite carb (crackers, wrap, wheat bread) and enjoy!

Tips

If you've got the time, simmer skinless, boneless, chicken breast in a large pot of water with carrots, onions, celery, bay leaf, parsley, garlic and peppercorns. It imparts a lovely flavor to the meat and leaves you with wonderful sodium-free chicken broth to use later!

Use pre-cooked chicken breast to speed up prep time. Cook your own chicken (60 mins at a simmer) if you've got the time! (see tips)
