Ingredients

    8 oz cooked chicken breast, cubed
    3 oz processed cheese spreed (Velvetta), cubed
    2 Tbls reduced calorie butter
    1 cup chopped onion
    2 cans Rotel, drained
    2 Tbls cornstarch
    1.5 cups chicken broth (divided use)
    4 corn tortillas (6 inch diameter)
    Salt, pepper, garlic to taste

Tips

If the chicken is already cooked, it speeds up the prep time. You can make 2 casseroles and freeze 1.


Directions

Saute onion in butter.
Add 1 cup chicken broth, cornstarch, and chicken and mix well. Cook 5 minutes (stir often).
Add remainint 1/2 cup broth, drained Rotel, salt, pepper, and garlic. Cook until thick. Stir often.
Spray an 8x8 casserole dish with nonstick cooking spray.
Layer 2 tortillas, 1/2 the cubed cheese, and 1/2 the chicken mixture. Repeat with remaining ingredients.
Bake at 350 degrees for 30-45 minutes.
