1 large can stewed tomatoes(4 cups)
6 cups Savoie cabbage
2 cups celery, diced
2 cups onion, diced
1 cup spinach, chopped
1 cup green pepper
1 cup red bell pepper
black pepper
salt to taste
8 cups water or homemade chicken stock (unsalted)
1 to 2 tsps herbs of provence (or to taste)
Tips
Make it a meal by adding your protein(cooked chicken, tenderloin, fish to your serving, or your carb (brown rice, couscous or pasta) or both. Great luch for the office.
Directions
1. Place oilvie oil in large pot add onions and cook until transparent.
2. Add all the other vegetables and cook on medium heat 5-7minutes
3. Add spices and water. Bring to a simmer and cook on low for 20-30 minutes to let the flavours develop.
