Ingredients

Mix Well:
Light Extra Virgin Olive Oil, 1/4 c
Granulated Sugar, 3/4 c.
Vanilla Extract, 3 tsp
Egg, fresh, 2 large
Gradually Add:
Unbleached All-Purpose Flour, 1 3/4 cup
Salt, 1/4 tsp.
Baking Powder, 1 tsp
Add:
Cranberries, dried, sweetened (craisins), 1/2 cup
Almonds, 1 1/2 cup, slivered
Tips
Check during the final 10 minutes to be sure the biscotti are drying - not burning.
I substitute other nuts, dried fruit and sometimes chocolate. Nice gifts.
Directions
Heat oven to 300*F
Line Cookie sheet with parchment paper
Mix dough, divide in half and form two logs (12x3inches)
Use your hands to do this and make sure your hands are wet, the dough will be sticky.
Bake 35 minutes rotate pan once at 15 minutes.
Remove from oven and let stand for 10 minutes. Reduce temp to 275*F.
Cut logs on diagonal into 3/4" slices. Lay on sides on parchment, bake for 10 minutes, turn and bake on other side an additional 10 minutes. Remove and cool.
