Ingredients

1.5 lbs chicken breast cut into strips
1 can (15 oz) lite coconut milk
2 Tbs green curry paste
1 stalk lemon grass cut into 1-inch lengths
1 cup reduced sodium chicken broth
2 Tbs lime juice
2 cloves minced garlic
2 tsp fresh minced ginger
0.5 tsp turmeric
0.5 cup frozen peas
2 Tbs fresh minced cilantro
Tips
Serve over Jasmine rice - or use as soup.
Directions
Whisk Green curry paste into coconut milk in small bowl. Cut chicken into strips. Mix all ingredients in the slow cooker EXCEPT peas and cilantro. Cook on low for 6-8 hours, or on high for 3-4 hours. 15 minutes before end of cooking time, add frozen peas and cilantro. Just before serving, remove lemon grass and serve over Jasmine rice - can be drank as soup as well.
