This super-tasty and very easy-to-make beef, bean, and vegetable stew is what I call "Triple H". It's homemade (only 1 hour to make), healthy (only 243 calories per serving), and it's hearty (12 grams of protein per serving). I hope that you and your family enjoy this as much as I do! Ingredients

    - ground beef (1 pound)
    - potatoes (4 small)
    - carrots (4 large, whole)
    - cooked brown rice (1 cup)
    - black beans (1 can or about 2 cups)
    - pinto beans (1 can or about 2 cups)
    - chili beans (1 can or about 2 cups)
    - red beans (1 can or about 2 cups)
    - yellow sweet corn (1 can or about 2 cups)
    - vegetable broth (1 container or 4 cups)
    - dried, minced onion (2 tablespoons)
    - garlic powder (2 tablespoons)
    - crushed red peppers (2 tablespoons)
    - chili powder (1 tablespoon)
    - oregano (1 tablespoon)
    - lemon pepper (2 teaspoons)

Tips

Some microwaves have options for defrosting and cooking specific items. If your microwave does, simply put your 1 pound of ground beef in a bowl and press "1 lb. Quick Defrost." Then, simply put your 4 potatoes onto a plate next to each other and press the button that says "Potato." If your microwave does offer these options, it will cut your prep time in half.
Also, I highly recommend that you season your meat with salt and pepper BEFORE putting it in with all of the other ingredients. If you do, this will add so much flavor to the stew!


Directions

1. Cook your brown rice until medium-soft.
2. Take your defrosted ground beef and cook it on medium-high in a medium saucepan.
3. Cook your potatoes until medium-soft to touch.
4. Now it's time to do the prep work! Chop up your carrots and potatoes into medium-small pieces to your liking.
5. Combine your vegetable broth, meat, potatoes, carrots, rice, beans, and corn into a large pot.
6. Now it's time to add your herbs and spices. Add your garlic powder, (dried, minced) onion, crushed red pepper, chili powder, oregano, and lemon pepper.
7. Cook the stew (ALL ingredients) for 30 minutes on medium-high heat (around 6-8 on your stove).
8. ENJOY!
