Introduction

If you want a more Diabetic friendly version of the "Diet Coke Cupcakes" my version here is a good one to try. I made a mistake in the first recipe entitled "Gluton Free Diet Coke Cupcakes" in the calories. This one is corrected. Ingredients

    1 package Gluten Free Cake Mix from Betty Crocker
    1 Can Pillsbury Sugar Free Frosting Vanilla
    2 Egg Whites
    10 oz Diet Coke (I used Cherry Zero my favorite)

Tips

Using different flavor cake mix or frosting might change the calorie content (I used Gluten Free Devil food cake mix). Check it with the recipe calculator if you do. Sorry about the mess up with the first posting of this recipe. First time I tried and I did not know how to take down the first one. Hope I don't mess anyone up.


Directions

Mix cake mix, coke, and eggs white together till smooth. Divide into 19 cupcake liners. Put into a pre-heated 350 degree oven for 14 minutes or tooth pick comes out clean from middle.Place on wire rack to cool. Use 1 3/4 tbls of sugar free frosting on each cupcake. You will have left over frosting, be strong and don't eat , throw it away, and enjoy the cupcakes!
