Ingredients

* 1 lb ground turkey (extra lean)
* Taco seasoning
* Cilantro, salt, pepper, and garlic (optional)
* 1/4 cup enchilada sauce
* 1/4 cup mexican grated cheese
Tips
For a carb-ed up option, you can add filler to the meatballs such as breadcrumbs and serve in a tortilla or sub roll.
Directions
Preheat oven to 350.
Mix ground turkey, taco seasoning, optional seasonings, and enchilada sauce together. You may need to omit some of the enchilada sauce (just want it slightly wet - not soupy). Start with half the sauce and add more if needed.
Either form into meatballs on a baking pan or place meat in a muffin pan, leaving a little room at the top.
Bake for 30 minutes. Top with cheese and bake for an additional 2-5 minutes.
Serve and enjoy!
Serving Size: Makes 6 muffin pan sized portions or about 12 meatballs.
