Ingredients

Pork Tenderloin, 9 oz , cut into 1 oz pieces
Egg, fresh, 1 large (beaten) (you will use only 1/2)
Progresso Bread Crumbs - Italian Style, 1/3 cup
Colavita Extra Virgin Olive Oil, 4 tbsp
Garlic, 2 clove
Tips
Serve with spaetzle and applesauce.
Directions
Cut the tenderloin into 1 inch pieces.
Flatten each with a mallet
Beat the egg in a shallow bowl
Put the breadcrumbs in another shallow bowl
Dip the pork pieces one at a time into the egg then into the bread crumbs.
Let rest on a plate for a few minutes to allow the breading to set.
Heat the oil in a skillet over medium high heat
Add the garlic and let it brown slightly, then add about half of the pork.
Brown on one side (about 3 - 4 minutes) then turn over and brown on the other side.
Remove from the pan and check your oil level (you may need to add another tablespoon or two of oil at this point).
Let the oil come back to temperature, then add the last pork pieces and brown on both sides.
Serving Size: Makes three 3 oz servings
