Ingredients

*1 teaspoon extra virgin olive oil
*1 cup minced sweet onions
*1 tablespoon minced or crushed fresh garlic
*One 28-ounce can crushed tomatoes
*1/3 cup vodka
*1 cup fat-free half-and-half
*2 teaspoons fresh lemon juice
*1/4 cup plus 2 tablespoons grated Parmesan
*1/2 teaspoon dried basil
*1/2 teaspoon dried oregano
*1 packet of splenda
*1/4 teaspoon salt
Tips
Adaptations from the original recipe - I used shallots instead of onions, splenda instead of sugar, and regular grated parmesan instead of reduced fat.
Directions
1. Place a medium nonstick saucepan over medium heat. Put in the olive oil, onions, and garlic and cook, stirring occasionally, until the onions and garlic are sweating and tender but not at all browned, 8-10 minutes.
2. Reduce the heat to low. Add the tomatoes and vodka. Slowly stir in the half-and-half.
3. Then stir in the lemon juice, Parmesan, basil, oregano, sugar, and salt until smooth and well combined.
4. Cook over the lowest heat setting, covered, for at least 3 hours, stirring occasionally.
5. Serve immediately or refrigerate in an airtight container for up to 5 days.
Makes approximately 4 cups; 8 servings.
