Introduction

Ingredients:
Cinnamon, ground, 1 tsp
Ginger, ground, 1 tsp
Canola Oil, 0.25 cup
Orange Peel, 1 tsp
Raisins, 0.50 cup, packed
Pumpkin 100% canned 0.50 cup
Baking powder 2 tsp
Flour, whole grain, 1.50 cup
*Flax Seed, 2tbsp
egg white, fresh, 2 large
Milk 1% or skim 1 cup
(spray muffin pan with PAM then fill and bake)

    *Flax Seed, 2tbsp

Tips

try cranraisins as a change.. i like them with both 1/4 cup each


Directions

mix all dry ingrediants
- small bowl beat egg whites til foamy, and all remaining liquid ingrediants and grated orange peel
-- stir into dry ingrediants til mixed well

Add to muffin pan that was sprayed with Pam.
makes 12 reg size muffins
Bake 375 oven or until tops are dry and spring back.

turn out on rack to cool
