Ingredients

    1 med eggplant unpeeled, sliced brushed with 2 T olive oil and roasted for 20 min at 425 degrees, turned after 10 minutes

    1 pkg trader joes pizza dough
    1/2 jar trader joes pizza sauce
    3/4 package daiya mozzerella style cheese
    6 oz mushrooms, thinly sliced
    1/6 package of gimme lean sausage style pinched into little balls

Tips

press pizza dough into pizza pan, cover with sauce and cheese, lay roasted eggplant covering top, dot with sausage balls and cover with mushrooms. Cook for 20 minutes at 425


Directions

cook pizza in preheated oven ro 425 for 20 minutes or until crust is brown and toppings are bubbly
