Introduction

I make a batch of this about every 2-3 days. It's a great alternate for mayo etc. on samdwiches, and we love to dip raw veg in it for a snack. I make a batch of this about every 2-3 days. It's a great alternate for mayo etc. on samdwiches, and we love to dip raw veg in it for a snack.
Number of Servings: 12

Ingredients

    1/2 cup dried chick peas (soaked over night and cooked)
    3 tbsp tahini
    3 tbsp lemon juice
    3 cloves garlic (minced)
    1 tbsp toasted sesame seeds
    1/4 tsp ground black pepper


Tips

You may substitute for canned chick peas, bearing in mind that the nutritional values will change.
If I have green onion in the house I add 2 tops (about 3 inches each) as well.


Directions

Soak chick peas over night in the refridgerator.
Bring to boil in saucepan of water, turn down and simmer 20-30 minutes, or until fairly tender.
Allow to cool. (running under cold water helps speed this up)
Place all ingredients in a blender of small food processor.
Blend until it is a paste. Be sure to scrape down sides often so that it mixes well.

Serving Size: about 12 - 2 tablespoon servings
