Ingredients

    Pork Tenderloin, 1 lb, sliced thin
    Green Peppers , 1 cup, strips
    Red Peppers, 1 cup, sliced
    Onions, raw, 1 cup, sliced
    Carrots, raw, 1/2, chopped
    Sugar-free Apricot Preserves, 1/2 cup
    White Vinegar, 1 cup
    Cornstarch, 1 Tbsp

    White Rice, long grain, 4 cup

Directions

Brown pork and then add carrot and onions, preserves and vinegar, and 1 cup water. Cook until carrots start to become tender, but do not overcook. Add bell peppers and simmer 10 minutes; do not overcook or peppers become mushy and lose flavor. Bring mixture to a boil. Dissolve cornstarch in 1 cup water and add to mixture. Return to a boil and allow to boil for 3-5 minutes. Turn down heat and simmer for 8-10 minutes. Sauce will thicken as it sits.

Serve over 1/2 cup rice per serving.
