Introduction

Ingredients

    1 lb lean ground turkey
    4 bell peppers (I use green)
    1/2 cup chopped yellow onion
    2 garlic cloves, minced
    1 cup cooked brown rice
    10 oz. can of Rotel diced tomatoes with chiles
    8 oz can tomato sauce, Hunts
    1 cup red beans

Tips

You can also sprinkle shredded cheese over the top (those calories not included.)


Directions

Preheat oven to 400 degrees. Chop onion and mince garlic and saute over medium heat for about five minutes. Add turkey and brown completely. Meanwhile, cut peppers in half lengthwise and remove seeds and core. Pour 8 oz can of tomato sauce into 9x13 glass baking dish and put in peppers with open side up. Once browned combine the turkey mixture in a large bowl with can of tomatoes/chiles, 1 cup of beans, and 1 cup of cooked brown rice. Stuff each pepper half with mixture and cover dish. Bake for 30 minutes. Spoon tomato sauce onto cooked peppers and enjoy!

Serving Size: Makes 8 pepper halves.
