Ingredients

    Butter, unsalted, 100 grams
    Granulated Sugar, 90 grams
    *light brown sugar, 90 grams
    Egg, fresh, 1 large
    *Vanilla Essence, 1 tsp
    Plain white flour, 125g
    *mixed spice, 1 tsp
    Baking Powder, 0.5 tsp
    *Bicarbonate of Soda, 0.5 tsp
    porridge Oats, 75 grams
    Raisins, 175 grams

Directions

1) Cream together butter and sugars and then beat in egg and vanilla extract
2) Sift flour, mixed spice, baking powder, bicarbonate of soda together and then add to the butter mix. Beat until just combined and then stir in the oats and raisins.
3) Lightly grease 2 baking sheets and using your hands, form the dough into 22 walnut sized pieces, spacing widely on sheet, pressing them down to flatten slightly.
4) Bake at 190'C/375'F/gas mark 5 for approx 10 minutes, until lightly golden and then transfer and cool on a wire rack
