Ingredients

    Ingredients:

    3 cups All Purpose Unbleached Flour (or 1/2 and 1/2 unbleached flour and whole wheat bread flour)
    3 tsp Baking Powder
    1 tspBaking Soda
    0.5 tsp Salt
    1 tsp Cinnamon, ground
    1 tsp Nutmeg, ground
    2.5 cups Banana
    3 cups soymilk, plain (or whatever other non-dairy milk you use)
    0.5 tbsp Distilled White Vinegar
    2 cups Blueberries, fresh or frozen

Directions

Mix dry ingredients in large bowl. Mix wet ingredients in another bowl. Add wet to dry ingredients. Fold in blueberries. Drop 1/4 cup of batter at a time onto preheated (medium heat) griddle that's been sprayed with cooking spray or brushed with a little oil. Cook for about 2 minutes on each side. Enjoy!
