Ingredients

    1 Tbsp vegetable oil
    1 Cup chopped white onions
    1/2 C. chopped Red Bell Pepper
    1/2 C. chopped Green Bell Pepper
    1 tsp Cumin
    1/2 tsp Salt
    1/4 tsp Cayenne
    1 Tbsp minced Jalapeno
    1 tsp minced Garlic
    1 C. chopped Tomatoes in their juice
    1 C. Chicken Stock
    3 Tbsp chopped Cilantro

Tips

It freezes fine, so freeze anything you don't think will get used within a few days.


Directions

In a medium pot, heat the oil over medium-high heat. Add the onions and bell peppers, and cook, stirring, for 3 to 5 minutes. Add the cumin, salt, cayenne, jalapeno, and garlic, and cook, stirring, for 30 seconds. Add the tomatoes and their juices and cook, stirring, for 2 minutes. Add the stock and simmer until thickened, about 15 minutes. Remove from the heat and add the cilantro. Adjust the seasoning to taste.

Serving Size: Makes 8 1/2 Cup servings
