Introduction

I like this. It's easy to make. Not the lowest in fat...but at least it's not fried! I usually serve it over rice. I like this. It's easy to make. Not the lowest in fat...but at least it's not fried! I usually serve it over rice.

Ingredients

    2 lbs of chicken thighs and drumsticks
    1-1/2 cups water
    1/3 package frozen stew veggies (I'd reccomend using more veggies but 1/3 of the bag was all I had left)
    1/2 cup chopped white onion

Tips

Serve over rice, as soup with rice, add noodles or let water evaporate until thickened by potato starch for a thicker stew like meal! Have fun, play with it. You can always add more water or less water.


Directions

clean chicken and put in large pot with 1-1/2 to 2 cups water, chopped onions and seasoning. Bring to boil, reduce heat and simmer covered for 1-1/2 to 2 hours. Stir occasionally Add 4-10oz of frozen stew veggies to pot and bring back to boil. reduce heat. Simmer for an additional 30 minutes (or until veggies are tender). Add more water if desired/necessary.
