Introduction

Ingredients

    8 small corn tortillas
    1 jar salsa (whatever type/heat you prefer)
    1 can low-fat refried black beans
    aprox. 1 Cup shredded chicken breast
    2 tbs finely chopped cilantro
    2 Cups light shredded cheddar or mexican blend cheese

Directions

In a small casserole dish (8x8 square or similar) spread 2 tablespoons of salsa. Cover with two and a half tortillas, to cover bottom of dish. spread half of beans over tortillas, followed by half of chicken, 3/4 C of salsa and 1/2 C cheese. Repeat layers, sprinkling cilantro over cheese. Cover with last of the tortillas, remaining salsa and remaining cheese. Bake at 359 degrees for 35-40 minutes, until heated through.
