Number of Servings: 6

Ingredients

    1 1/2 lbs pork roast (I used a pork tenderloin)
    1 tsp salt
    1 tsp black pepper
    2 tsp dried oregano
    1 tsp cumin
    1 onion - cut into 8 large pieces
    4 cloves garlic
    1 5-ounce can green chilies
    12 corn tortillas
    1 jar salsa or salsa verde
    1 cup sharp cheddar cheese - shredded
    1/2 cup sour cream

Directions

1) Season pork well with all seasonings. Place in crockpot. Place onion chunks, garlic and green chilies on top.
2) Cook on low for 8 hours.
3) Prior to serving, shred meat.
4) Place tortillas on a baking sheet and bake at 350 for about 8 minutes. They should be a little crunchy but still flexible.
5) Serve shredded pork, salsa, cheese, and sour cream on tortillas. Fold tortillas like a taco.
