Ingredients

    1 cup chickpeas (either soak dryed ones or use canned)
    1 cup chopped kale or other green such as collard or spinach
    1-2 chopped carrots
    2 tbsp oil
    1 tbsp curry powder (or more if you prefer it spicier)
    salt and pepper to taste
    1/2 oz grated parmesan cheese (optional)

Tips

This is good hot or cold, can be served with rice or by itself depending on preferences.


Directions

heat oil in pan and stir fry chickpeas, carrot and kale until tender, mix in curry powder, salt and pepper. Top with Parmesan cheese if desired.
