An easy, hearty soup-all in one pot! An easy, hearty soup-all in one pot!
Number of Servings: 14

Ingredients

    6 parsnips
    8 cups water
    1 large red pepper
    3 cloves garlic
    7 large Granny Smith apples, fresh
    1-1/2 cup red lentils
    2 tbsp salted butter
    1/2 tsp salt or to taste
    2 cups chicken broth
    3 tbsp curry powder
    1/4 tsp hot pepper sauce, or to taste

Directions

Wash and cut apples, parsnips and red pepper into rough pieces and put in 4 qt slow cooker, leaving skins on all veggies.
Combine all recipe ingredients in slow cooker with water (omit or add some water depending on volume of ingredients in pot).
Cook on high until all ingredients are soft-about 2 - 3 hours.
Then, using a hand blender, puree all ingredients in cooker until smooth.
Continue cooking on low until all flavors have combined and you're ready to eat!
Easy as pie and better for you.
Makes 4 qts soup, about 14 servings.

    I know the title says curried but I don't like curry and just left it out. Soup was still tastey. - 8/18/08

    I have often thought another spice, say thyme? or basil? might work instead.

    This is a nice soup--it wouldn't all fit into our 4 qt slow cookier, so we cooked it in a slightly larger Dutch oven. - 10/21/08
