Ingredients

    3 C non-fat beef broth
    2 Cloves minced garlic
    1 Tbsp. tomato paste
    2 C Chopped cabbage
    1/2 Yellow onion
    1/2 C Chopped carrots
    1/2 C Green beans
    1/2 C Chopped zucchini
    1/2 Tsp. basil (1/4 C fresh basil)
    1/4 Tsp. oregano
    salt and pepper

Tips

You can make different variations of this. I have added a 1/4 C of Franks Hot Sauce, mushrooms, vinegar, etc. its easily adjusted for taste.


Directions

*Saute onions, carrots and garlic for 5 minutes.
*Add broth, tomato paste, cabbage, green beans, basil, oregano and salt and pepper to taste.
*Simmer for about 5-10 minutes until all vegetables are tender, then add the zucchini and simmer for another 5 minutes

Serving Size: Makes 6-8, 1 Cup Servings
