Ingredients

    2lbs dry beans, soak overnight in water
    1 can fire roasted tomatoes w/ juice
    1 can mild rotel w/ juice
    3 onions chopped
    1 poblano pepper seeded and chopped
    8 cloves of garlic, peeled and smashed
    1 bunch cilantro chopped (all but last 2 inches of stems)
    3T of ground comino

Tips

quick and simple. very filling. good on top of salads, or over brown rice. Freeze really well!!!


Directions

1. Soak beans over night (or at least 8 hours)
2. put beans at the bottom of large crockpot
3. add all ingredients
4. add salt to taste
5. cook on low for 8.5 - 9 hours (depending on your cooker)
