Introduction

Ingredients

3 tbsp olive oil
3 eggs (or egg white substitutes)
1 c almond milk
1 c coconut milk (contains *healthy* saturated fat)
1/8 c splenda
[1 tsp salt (optional)]
1 cup whole wheat flour
Tips
This is a great Norwegian recipe. I'm sure there are better conversions out there than mine, but I had to make do with what I had in my kitchen! This version will not be as moist as the original version, but it is still good and MUCH healthier without the butter, dairy milk, sugar, and with whole grain whole wheat flour. Good for Phase 2-3 of the South Beach Diet.
Directions
Put 3 Tbsp olive oil in a 9"x9" pan and place in hot oven 450 degrees to heat (careful not to leave too long because this was meant for butter... I removed the pan from the oven after it was warmed up)
Beat 3 eggs,
1 c almond milk
1 c coconut milk
1/8 cup splenda
[1 tsp salt (optional)]
1 cup whole wheat flour.
remove pan from oven and add mixture to heated oil. mix well.
return to oven @ 450 degrees for about 20 minutes (until edges are golden or light brown)
Serve with sugar free maple syrup.
Serving Size: Makes about 4 servings.
